Fall-off-the-bone like you wouldn't believe!
I put 2 racks of ribs on a rack in a pan (cut them to fit) with a couple of cups of water in the bottom. You could use beer, apple juice, wine etc, anything that strikes your fancy, and covered them tightly with foil. Perk for 2 hours on the BBQ at about 250F/125C. Remove the ribs from the pan and slather them with your favourite sauce then park them on a med hot grill for 15 minutes, turning every 5 minutes. The ones on the left have your usual tomato flavoured BBQ sauce, the ones on the right I pasted with a dark beef gravy. I don't care much for BBQ sauces, I like meat flavour.
On the left there's a pan of my favourite potatoes . . . wash & cut into chunks about 3/4" square (2 cm). Dry thoroughly in a towel then coat liberaly with olive oil. Spread in a single layer in a pan and place the pan on the BBQ on medium (hot enough to make them fry slowly) and toss every 5 minutes. They take about 70 minutes. After 50 minutes, sprinkle with onion salt, paprika and dried parsley, toss well. They're not unlike french fries, but without the oil.
